A measure of the quality or freshness of an egg—the height : width ratio of the albumin when the egg is broken on to a flat surface. As the egg deteriorates, so the albumin spreads further, i.e. the albumin index decreases. Also known as Haugh score. See also egg proteins; egg-white.
