Crystallized young stalks of the southern European umbelliferous herb Angelica archangelica (A. officinalis). They are bright green in colour, and are used to decorate and flavour confectionery. The roots are used together with juniper berries to flavour gin, and the seeds are used in vermouth and Chartreuse. Essential oils (see oils, essential) are distilled from the roots, stem, and leaves. The root of A. sinensis is dong quai, a traditional Chinese medicine.
