Tuber of the Caribbean plant Maranta arundinacea, mainly used to prepare a particularly pure form of starch which contains only a trace of protein (0.2%) and is free from vitamins. It is used to thicken sauces and in bland, low-salt, and protein-restricted diets. Queensland arrowroot is from the rhizome of achira.
