Auslese means literally ‘selection’, and denotes a category of German and Austrian white wine made from perfectly ripe grapes. The wines have a marked degree of sweetness, although not usually the intense lusciousness of the next category up, beerenauslese, where not just the bunches but the individual grapes are carefully selected.
