Azo dyes are a group of nitrogen-containing chemicals added to some foods. They include amaranth and tartrazine which colour food purple-red and yellow, respectively. These compounds may cause headaches and other unpleasant symptoms in some sensitive people. Azo dyes have also been implicated in causing hyperactivity in some children.
