Quick Reference
Zizania latifolia or Z. aquatica. The edible portion is the succulent stem; stem enlargement is due to the fungus Ustilago esculenta, which prevents floral initiation; it must be harvested before the fungus enters the reproductive phase when the spores form black smut.
