Basmati is a high-quality variety of Indian long-grain rice, characterized by its particular fragrance when cooked (Hindi bāsmatī means literally ‘fragrant’). It is generally considered the best rice for accompanying curries. Early references to it in English texts of the nineteenth century spell it basmuttee, and it is only really since the 1960s that the current form has established itself.
