Bel Paese is the proprietary name of a firm-textured mild-flavoured Italian cow's-milk cheese. It was created by Egidio Galbani in 1906, and is still made by his family in Melzo, Lombardy. Bel paese means literally ‘beautiful country’, and reputedly comes from a book written by a friend of Galbani's, Abbot Antonio Stoppani.
