Borecole is an alternative name, now rarely used, for ‘kale’, a vegetable of the cabbage family. It was borrowed in the early eighteenth century from Dutch boerenkool, which means literally ‘peasant's cabbage’. The element -cole is of course the same word as kale, and it is also represented in the caul- of cauliflower and the cole- of coleslaw. Its ancestor was Latin caulis, ‘cabbage’.
