A buck rabbit is a Welsh rabbit with a poached egg on top. The earliest recipe for it in print seems to be in Jessie Lindsay and Vernon Mottram's Manual of Modern Cookery (1927). The name was no doubt inspired by buck rabbit, a term for a male rabbit. The dish is sometimes alternatively called a golden buck.
