A red carotenoid pigment which is not a precursor of vitamin A. It is used as a food colour, and can be added to the diet of broiler chickens to colour the skin and shanks, and to the diet of farmed trout and salmon to produce the same colour as is seen in wild fish, which is derived from carotenoids in natural foodstuffs. It is also used to maintain the plumage colour of flamingos kept in captivity.
