Poorly absorbed fat, two medium-chain fatty acids (capric and caprylic) and one very long-chain fatty acid (behenic) esterified to glycerol; used as a fat replacer. Provides 20 kJ (5 kcal)/g because caprylic and capric acids are metabolized less efficiently than longer-chain fatty acids, and behenic acid is only partially absorbed. Its melting profile is similar to that of cocoa butter.
