Leafy vegetable (Cynara cardunculus); both the fleshy root and the ribs and stems of the inner (blanched) leaves are eaten. Extracts from the dried flowers are used as vegetable rennet in cheese making. Sometimes called chard, although distinct from true chard or spinach beet.
