In French literally ‘hearts of cream’, these little confections are made of curd cheese, cream, egg whites and sugar, mixed together and put into heart-shaped moulds that have drainage holes in the bottom. They are served either on their own, with cream, or with fruit. An alternative French name for them is crémets.
