Potassium hydrogen tartrate, used with sodium bicarbonate as tartrate baking powder because it acts more slowly than tartaric acid and gives a more prolonged evolution of carbon dioxide. Also used to invert sugar (see sugar, invert) in making boiled sweets and as a sugar doctor. See also tartaric acid.
