Eggs are a staple dietary item and have numerous uses and varieties of culinary preparation and presentation. Most are safe and nutritionally beneficial. Eggs occasionally carry pathogens, such as certain Salmonella species, and they have a high cholesterol content, but many dietitians believe the benefits of egg products outweigh possible hazards from the high cholesterol level, although not, of course, the risk of contaminating pathogens.
