A short, rapid application of heat so that a small volume (about 1% of the total) is quickly distilled off, carrying with it the greater part of the volatile components. The flash distillate is collected separately from the later distillate and is added back to the concentrate to restore the flavour; applied to the concentration of products such as fruit juices.
