Dried foods that reconstitute rapidly when water is added, e.g. tea, coffee, milk, soups, precooked cereal products, potatoes, etc. The dried powders may be agglomerated to control particle size and improve solubility (see instantization). ‘Instant puddings’ are formulated with pregelatinized starch and disperse rapidly in cold milk.
