A derivative of the amino acid glutamate whose formation in post-synthetic modification of precursor proteins requires vitamin K. It is found in prothrombin and other enzymes involved in blood clotting, and in osteocalcin and matrix Gla protein in bone, where it has a function in ensuring the correct crystallization of bone mineral.
