The simplest ketose (1,3-dihydroxy-2-propanone, dihydroxyacetone, DHA) that in its phosphate form, dihydroxyacetone phosphate (DHAP), takes part in glycolysis. Used as a tanning product because it reacts chemically with keratin in a Maillard-like reaction to produce brownish pigments, melanoidins, in the outer layers of the skin.
