A process to modify the properties of a fat for food manufacturing purposes, by interchanging fatty acids between molecules of triacylglycerol. Lipases catalyse the exchange of fatty acids at carbons 1 and 3 of glycerol, leaving the fatty acid at carbon‐2 unaffected. See also transesterification.
