Heterofermentative lactic acid bacteria used in the fermentation of vegetables (e.g. cabbage and cucumbers), where they initiate lactic acid fermentation. L. mesenteroides subspp. cremoris is used in dairy starter cultures because it produces diacetyl, which has a buttery flavour. L. mesenteroides subspp. mesenteroides produces dextrans and levans that are used industrially.
