At one time the most commonly used assay to quantify protein content, based on the interaction of Folin–Ciocalteau reagent with tyrosine or phenylalanine. Those proteins that have less than the average content of these amino acids will be underestimated and for proteins like collagen the Bradford assay gives a more accurate result.
