The change from diseases associated with undernutrition to those associated with over-nutrition as countries develop. There has been a demographic transition, from high fertility associated with high mortality, to low fertility and low mortality, with increasing industrialization. At the same time there has been an epidemiological transition from a pattern of high levels of infectious disease associated with undernutrition and poor sanitation to a high prevalence of the chronic non-communicable diseases that were formerly known as the diseases of affluence.
