After the wine that is to become sherry is poured into butts to mature, it quickly becomes apparent which of the main categories it will turn into: fino or oloroso. But occasionally a third type, intermediate between the two, crops up; this is palo cortado (literally ‘cut stick’ in Spanish). It has the finesse of a fino and the body and depth of an oloroso, and is highly prized (and priced).
