A Paris-Brest is a large wheel-shaped cream-filled choux-pastry gâteau. It gets its name from the Paris–Brest bicycle race: a Parisian pastrycook whose shop was on the route of the race from Paris to Brest in Brittany and back decided in 1891 to create in its honour a cake which would resemble (somewhat impressionistically) a bicycle wheel.
