An enzyme present in the pith (albedo) of citrus fruits, which hydrolyses pectin or pectic acids into smaller polygalacturonic acids, and finally galacturonic acid and its methyl ester. Used to clarify fruit juices. Also known as pectolase, pectozyme, and polygalacturonase. Distinct from pectase.
