Quick Reference

An obsolete system of classifying proteins into first and second class, to indicate their relative nutritional value or protein quality. Generally, but not invariably, animal proteins were considered ‘first class’ and plant proteins ‘second class’, but this classification has no validity in the diet as a whole.
