Hominid precursors of humans discovered almost a million years ago that meat placed in or near a fire to cook improved in flavor, was easier to digest, and did not go bad as rapidly, but it has been only about 150 years since humans discovered that raw meat, fish, and milk can cause disease because they contain or are good culture media for pathogenic organisms. Even so, many people enjoy raw foods, such as oysters, sushi, and uncooked vegetables. Provided raw foods are fresh and food hygiene is satisfactory, the risk of food poisoning is small.
