Quick Reference

Rijsttafel is a dish—or rather a set of dishes—of Southeast Asian origin which through the Netherlands' long colonial association with the East Indies has become established as a classic of Dutch cuisine. As its name suggests (it literally means ‘rice table’, from Dutch rijst, ‘rice’ and tafel, ‘table’), its main ingredient is rice, which appears in a large central bowl, but around it like satellites are plates of various other Indonesian delicacies, such as satay, curry, spicy soup, dried shrimps, and scrambled eggs.
