Quick Reference

Rouille is a Provençal sauce made from red chillis, garlic, olive oil, and breadcrumbs or potatoes, and served with bouillabaisse or other local fish dishes. The chillis give it a brownish-red colour, whence its name (French rouille means literally ‘rust’).
