A Saint-Honoré is a French gâteau consisting of a puff-pastry base surmounted by a circle of choux buns, which is filled with whipped cream and finished off with a topping of caramelized sugar. It was named after Saint Honorius, sixth-century bishop of Amiens and patron saint of pastrycooks, who is also remembered in the Rue du Faubourg Saint-Honoré in Paris.
