Star anise is the eight-pointed-star-shaped fruit of a small evergreen southern Chinese tree, so named from the resemblance of its smell and taste to that of anise. It is much used in Eastern cookery, but remains a comparative rarity in the West, although it was known of in Europe in the early eighteenth century (it was first named Chinese anise, but we find records of the term star anise from the 1830s).
