Vegetable oyster is an alternative name (dating apparently from the mid-nineteenth century but no longer much heard) for the salsify, a long thin white-fleshed root vegetable. Early commentators explained it as a reference to the salsify's flavour, but it would take a rather vivid imagination to make salsify taste like oysters, and it may in fact come from the substitution of salsify for oysters as an ingredient in meat pies when oysters started to become more expensive.
