The soluble proteins in milk, other than casein: β‐lactoglobulin (about 50% of the total), bovine serum albumin (BSA), α‐lactalbumin, and immunoglobulins. There are also small amounts of β‐microglobulin, lactoferrin, transferrin, and acyl glycoproteins.
