A French term meaning literally ‘little ball’, which is applied to a fairly whiffy soft cheese that is made in Belgium and French Flanders. It is produced in a variety of shapes—cylindrical, spherical and conical—and generally coated with herbs and spices or a covering of leaves. The best known is the red-rinded boulette d'Avesnes (Avesnes is in French Flanders).
