The deliberate addition of specific nutrients to foods as a means of providing the population with an increased level of intake. Generally synonymous with enrichment, supplementation, and restoration; in the USA enrichment is used to mean the addition to foods of nutrients that they do not normally contain, while fortification is the restoration of nutrients lost in processing.
