This chapter studies the stories of waitresses who have experienced stress while on the job due to money and the behavior of the customers. It describes the behavior of the various customers who eat in Chez Panisse, which can be considered the most influential restaurant in the United States. The chapter then looks at the behavior of customers in the elite Memphis Country Club, as well as the services provided in the Golden Door Spa. It ends with the story of an African American waitress working in the revolving restaurant of the Times Square Marriott Marquis, where she describes the kinds of tips left by the customers, who are mostly European.
