Through a study of menus and etiquette in the banquets laid on by the Canton Cohong merchants for their foreign counterparts, this chapter focuses on the styles of diplomacy that centred on food banquets. By asking straightforward questions such as ‘What kind of knowledge did the Chinese cooks and servants possess for entertaining foreign guests?’ it derives insight into what kind of impact this material cultural exchange might have left on Canton in the subsequent years.
